These homemade Star Crunch treats come together in literally 10 minutes with no oven required. The caramel gets all melty and gooey, the Rice Krispies stay perfectly crispy, and the chocolate coating sets into this glossy shell that absolutely shatters when you bite in. My kids inhaled the entire batch before they even fully set. I’m considering making a double batch from now on as a permanent policy.

🍫 The Chocolate Caramel Base
  • 2 cups milk chocolate chips
  • ½ cup caramel bits (or soft caramel candies)
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter

  • 3 cups Rice Krispies cereal
  • 1 cup mini marshmallows
  • Pinch of salt

  • 1½ cups milk chocolate chips (for dipping/coating)
  • 1 teaspoon coconut oil or vegetable shortening (helps it set smooth)

Melt the base: In a large microwave-safe bowl, combine 2 cups chocolate chips, caramel bits, heavy cream, and butter. Microwave in 30-second bursts, stirring between each, until fully melted and glossy smooth. It should smell incredible at this point 😍

Add the crunch: Pour in the Rice Krispies, mini marshmallows, and pinch of salt. Fold gently until every piece is coated in that gorgeous chocolate caramel mixture. Don’t overmix — you want to keep the cereal as intact as possible for maximum crunch!

Shape the treats: Using a large spoon or cookie scoop, drop mounds onto a parchment-lined baking sheet. Press each one lightly into a round disc shape — about the size of your palm. Work fast before the mixture starts to set! Slightly wet hands help here.

First chill: Pop the tray in the fridge for 10–15 minutes until the discs are firm enough to handle without falling apart. This makes the dipping step SO much easier.

Make the coating: Melt the remaining 1½ cups chocolate chips with coconut oil in the microwave, stirring every 30 seconds until silky smooth. Let it cool slightly — you want it fluid but not scorching hot.

Dip & coat: One by one, dip each chilled disc into the melted chocolate, letting the excess drip off, then place back on parchment. You can spoon extra chocolate over the top for a thicker coating — I always do 😋

Final set: Let the treats set at room temperature for 20–30 minutes, or speed it up in the fridge for 10 minutes. Once the chocolate is fully set and glossy — they’re done! Try not to eat them all immediately. I believe in you. Barely, but I do 😂⭐

  • Use milk chocolate chips, not dark — it gives you that classic sweet Star Crunch flavour you remember from childhood.
  • Adding coconut oil to the coating chocolate makes it set with a beautiful glossy snap instead of going dull and chalky.
  • Don’t skip the first chill! Warm discs will fall apart when you try to dip them. 15 minutes in the fridge makes all the difference.
  • Want an extra caramel hit? Press a soft caramel candy into the centre of each disc before the first chill. Life-changing.
  • Store in an airtight container at room temperature for up to 5 days — though they never last that long in my house!
