Okay I need to talk about these bars because they genuinely broke my brain. A buttery cookie base. A thick tangy cheesecake layer. Fresh strawberries swirled throughout. A crumbly golden topping. ALL in one pan. I brought these to a family gathering and had three people ask me for the recipe before I even sat down 😂

These are part cookie, part cheesecake, part crumble — and completely, dangerously irresistible. Perfect for summer potlucks, afternoon tea, or eating cold from the fridge at midnight. Not speaking from experience at all 🍓✨

🛒 Ingredients

🍪 Cookie Base & Crumble
  • 2¼ cups all-purpose flour
  • ½ tsp baking soda & ½ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar + ¼ cup brown sugar
  • 2 large eggs + 2 tsp vanilla extract
🍓 Cheesecake Filling
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs + 1 tsp vanilla extract
  • ½ cup strawberry jam
  • ½ cup fresh strawberries, diced
🍫 Optional Toppings
  • Melted white chocolate for drizzling
  • Fresh sliced strawberries
  • Crushed graham crackers

👩‍🍳 Directions

Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang on sides.

Cookie dough: Whisk flour, baking soda, and salt. Beat butter and both sugars until fluffy. Add eggs and vanilla. Stir in flour mixture until a soft dough forms.

Press base: Press ⅔ of the dough firmly into the pan bottom. Set remaining dough aside for the crumble topping.

Cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mix in vanilla. Spread evenly over the cookie base.

Strawberry swirl: Drop spoonfuls of jam over the filling, scatter diced strawberries on top. Gently swirl with a toothpick — don’t over-mix!

Crumble top: Break reserved dough into chunks and scatter over the strawberry layer.

Bake 32–38 minutes until edges are golden and center is just set. Don’t overbake!

Cool completely then refrigerate at least 2 hours. Lift out using parchment and slice into bars.

Finish: Drizzle with white chocolate, top with fresh strawberries and graham cracker crumbs. Try not to eat the whole tray 😂🍓

💡 Tips for Perfect Bars

  • Cream cheese must be fully softened — cold cream cheese leaves lumps.
  • Don’t skip the parchment overhang — lifts the whole slab out perfectly.
  • For clean cuts, refrigerate overnight and wipe the knife between each slice.
  • Swap strawberry jam for raspberry or blueberry for a totally different vibe.
  • Keeps in the fridge for up to 5 days — if they last that long 😂
