Brownie Bites

A buttery graham cracker crust on the bottom. A dense, fudgy brownie in the middle. A toasted marshmallow on top, drizzled with chocolate and finished with a crunch of graham cracker. These aren’t just brownies — they’re a campfire in a bite.
No bonfire required. Just a muffin tin, a broiler, and roughly 40 minutes between you and the best thing you’ve made all week.
The Ingredients
Brownie Mix
Your favourite box mix works perfectly. Prepared per package instructions for a fudgy bake.
Graham Crackers
Crushed and pressed into the base for that essential s’mores crunch. Reserve some for topping too.
Marshmallows
One per bite, placed on top and broiled to golden, gooey perfection just before serving.
Chocolate Drizzle
Melted and drizzled over the toasted marshmallow for that final glossy, indulgent finish.
Butter
Mixed with the graham crumbs to bind the crust so it holds together perfectly in the tin.
Flaky Salt
Optional but magical. A tiny pinch on top makes every flavour pop.
Step by Step

Preheat & Prep
Preheat oven to 175°C / 350°F. Grease a 12-cup muffin tin generously or line with paper cases.

Make the Graham Crust
Mix graham cracker crumbs with melted butter until it resembles wet sand. Press 1 tablespoon firmly into the base of each muffin cup.

Prepare & Add Brownie Batter
Mix brownie batter according to the package instructions. Spoon over the graham crust, filling each cup about ¾ full.

Bake
Bake until the brownies are just set with a slight wobble in the centre. A toothpick should come out with moist crumbs.

Top with Marshmallows & Broil
Place one large marshmallow on top of each warm brownie. Switch the oven to broil and toast until golden and puffed — watch closely, it only takes moments.

Drizzle & Finish
Melt chocolate chips and drizzle over the toasted marshmallows. Sprinkle with crushed graham cracker and a pinch of flaky salt. Serve warm or at room temperature.
Tips for the Perfect Bite
Watch the Broiler
Marshmallows go from golden to burnt in seconds. Stay at the oven and pull them the moment they turn golden.
Underbake Slightly
Fudgy brownies are the goal. Pull them out when the centre still has a tiny wobble — they continue cooking as they cool.
Press the Crust Hard
Use the back of a spoon or a small glass to really compact the graham cracker base so it holds its shape when unmoulded.
Serve Warm
These are best eaten within 10 minutes of broiling while the marshmallow is still gooey and the chocolate drizzle is glossy.
